Cheesy Taco Soup

I had two hungry men looking for a delicious meal, and I fed them this cheesy taco soup, and it was a huge hit. Guys, forget me saying any of my other meals were good, THIS is good. Did I mention it’s easy? 
Serves: In our family, 2-3


1 lb ground beef

2 Tbsps butter

2 Tbsps flour

2 1/2 cups milk 



1 cup cheddar cheese, shredded (& extra for topping)

1 package taco seasoning

10oz can Diced tomatoes with green chilies, undrained

15 oz can black beans, drained & rinsed

Crushed tortilla chips 

How to:

Brown ground beef in a large soup pot over medium-high heat, season with salt & pepper. When finished, drain & return to the pot.

At the same time, melt the butter in a small/medium saucepan over medium heat. When it’s melted, whisk in the flour. Slowly whisk in 1 cup milk, seasoning with salt and pepper. Stir until thickened! Then remove from the heat and stir in the cheese until smooth. Set aside.

Then, put your ground beef back on the heat and stir in taco seasoning, tomatoes, black beans, the cheese sauce you just made, and 1 1/2 cups milk– stir till combined. 

You want to bring the soup to a heavy simmer then you’ll turn it down to medium heat & simmer for 10 minutes- stir occasionally. 

Serve with extra cheese and crushed tortilla chips, and it will be a hit with the whole family!
